Last week, I gave this recipe for zucchini tater tots a try.
It…did not go as planned.
Mine look more like tater teens than tater tots.
Since I made them so big, they wouldn’t cook completely through for me. By the time I got to the shaping stage, I just wanted to be out of the kitchen, so I got lazy.
On the up side, they do taste pretty good, and I may have accidentally cooked a cultural dish from some other country.
That said, this recipe took forever to finish. Being the lazy cook I am, I don’t think I’ll be trying it again. Over an hour of combined cook/prep time isn’t worth tater-teens for me.
That said, if you love tater tots, want to include more veggies in your diet and don’t mind spending time in the kitchen, this is a great recipe to try.
